Thin Soft Cookies

Tried this recipe the other day in my search for a recipe similar to Ben’s Cookies. These weren’t similar, but turned out super soft and thin, similar to Millies Cookies.

You will need (Makes about 16-20):

  • 250g plain flour
  • 180g unsalted butter
  • 100g light muscavado sugar
  • 200g caster sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon bicarbonate of soda
  • 2 tablespoons vanilla extract
  • 1 egg
  • 1 egg yolk
  • 350g of any type of chocolate or filling (I used a combination of milk, dark and white)

The cookies before going in the oven. I put a bigger piece of chocolate on each cookie after rolling so it oozed out in the oven.

  1. Pre-heat your oven to 170C. Cover some baking trays in greaseproof paper.
  2. Cream the butter and sugars in a large bowl until its light in colour and fluffy.
  3. Mix in the egg and extra yolk, vanilla, salt and bicarbonate of soda.
  4. Mix in the flour until it forms a dough.
  5. Chop your fillings however you like (I like rough chocolate chips). Pour them into the dough and mix well.
  6. Using your hands roll balls of dough and place them on your baking trays. If you like, on top of each dough ball place a bigger piece of chocolate.
  7. Pat each ball down ever so slightly.
  8. Bake in the oven for 12 minutes.
  9. Take out and leave to cool on a wire rack.
  10. Enjoy!
