Scrambled eggs and smoked salmon croissants

This is fantastic if you ever fancy a posh breakfast.

I’m cheating here because my Mum cooked this over Christmas, but it was the best breakfast/brunch I’ve ever had, so I had to share it so you can try the recipe out for yourself.

Here is what her attempt looked like:

I seriously recommend trying this. Do your scrambled eggs on a low heat and take them off before you think they are done – you want them creamy and soft. Heston Blumenthal suggests cooking scrambled eggs in a bain marie, which you can read about here. I haven’t tried this yet, but certainly will be doing soon!

You haven’t lived until you’ve had this for breakfast.
